HACCP Compliance with Wireless

Compliance to HACCP in food industry is of most importance. E-Senza provides a solution to help you meet this challenge at a very reasonable cost and effort. One of customer IONIKI S.A. is one of the leading vertically organized production units for frozen dough and pastry products in Greece.
 
During production processes, IONIKI S.A. was measuring temperature data on the outside of their pastry filling mixers. To comply with HACCP standards in the food industry, the customer had to also measure the temperature inside the mixer which contains fillings for frozen food products. Manual data collection is simply impossible during production.
 
To ensure that a certain temperature level had been reached in a rotating mixer, wireless data collection was the best solution.
The challenge was to install the battery driven, low power SenzaBlock wireless sensors on the rotating section of the mixer, of which parts need to taken out regularly for cleaning.
 
Our partner in Greece, BitLogic Industrial Automation, solved this problem by using a SenzaBlock with PT100 sensor. SenzaBlock was mounted on the upper part of the mixer, the PT100 sensor can be placed at the right depth and easily be removed for cleaning.
 
When activated, the wireless sensor automatically samples, logs and transmits all temperature data in user-configurable intervals. They communicate to a SenzaGate, gathering and managing all the data and being responsible for reliable communication in the network. An Ethernet connection is used to transfer data to a central server system, where the wireless monitoring software SenzaWMS display all data.
 
Now IONIKI S.A. can monitor product quality more accurately and ensure compliance with HACCP standards at reduced labor costs.
